      In my opinion, the best things that you could realistically have on your person that would help you survive a knife attack, would be a belt and a cell phone. You could use the belt as a tourniquet to keep from bleeding to death, while you use the cell phone to call for help. These things may seem obvious, but I don't think anyone who is attacked in this way would see it coming, and these are things that I know I would have with me if it were to ever happen.
